I think on-the-fly commercial DVD rippers can read a DVD as a single stream (ignoring the VOB splits) and convert it right away to AVI. You’d have to look around to find out which ones. I can’t think of freeware programs that will do that off the top of my head.

If you’re using VirtualDub or NanDub, after you open your first part, click file, append AVI segment to add more parts to the end.
Couple of notes on that:
- Use NanDub if you have VBR audio. VirtualDub may create desynchronization with VBR audio.
- If all the parts are the same codec/resolution/frame rate etc... and you just want to join them, after you append all the segments, click video, direct stream copy. This step is important. If you don’t select direct stream copy, it will save as uncompressed, which is humongous. Then to save, click file, save as avi.
