I am using
Audio Codec : ALC861
Audio Driver Version : 5.10.0.5377
The ALC861 7.1 Channel High Definition Audio codec with UAA (Universal Audio Architecture), features four stereo DACs and one stereo ADC. The ALC861 is designed for multimedia PC systems.
With 7.1 output channels, along with mixing, mute, and gain control functions, the ALC861 provides an integrated audio solution for PCs. Parts of analog IO are input and output capable, and three headphone amplifiers are also integrated to drive earphones on front and rear panels.

I went to the RealTek page with the download for the driver of the device you’re talking about, and tried to install it, but it didn’t work because I don’t have the hardware in question. Needless to say all the programs bundled with it didn’t work either.
My only advice would be to go in C:\Program Files\Realtek\Audio\InstallShield and play with all the .exe files and figure out what they do. I see there’s also a .cpl (Control Panel) file in there, so you could have an extra entry in your control panel as well (classic view) - if not, double click the cpl file in the above-mentioned folder. And just keep looking for any button that allows you to downsample to stereo (if it’s available). If you can’t find it, contact RealTek here. If there’s a way they’ll tell you. It’s also possible the feature you want (downsampling to two channels) has not been implemented, so you can always request them to implement it in an upcoming version of the driver.
