Home movie server

I want to encode my movie collection and put it on a home server. I will play back via a laptop, a desktop 19” screen or a LCD television (not yet purchased), via an AppleTV or MacMini. I need suggestions for an OSX program to encode my movies. Also, what codecs and settings (if any) would make for a decent quality image on a mid-size TV and still transmit via 802.11g or n? Thanks in advance.
