Switching DVD burning modes???

Hi, i’m new at this video burning thing. And i was wondering, How would one change the burning mode, like LP, EP, SP, ect.
I want to fit as much video as i can onto a dvd-r. but i don’t know how to change the mode. Can anybody tell me?
